Cous Cous Burgers

I had some mixure left over from my Puff Pies and was wondering what to do with it! So I mixed it with the left over stuffing and some Cous Cous....this is what I came up with....I have eaten way to many...

Ingredients:
Left over stuffing from the pies
About 1/3 to a half a cup of Cous Cous
Tapioca Starch

Blend up left over pie mix, mix in stuffing and cooked Cous Cous (cooked by adding boiling water till just over covered and wait till cooked through and fluffed up!)

It's a very sloppy mix. So fold into the starch.i made them about the size of the base of a mug at most! Then drop into hot oil. (Be careful!)

Make sure the oil is hot but not smoking. I think it would work even better in deeper oil.

Make sure you pat with paper towel or a teatowel to get rid of the excess oil.

Perfect in my lovely bun, click here for how to make. This time I had rolled out the dough and wrapped it into its self so they came out a little over the size of a mug base.

They are not crazy healthly but perfect for party food or along with chips and veg a filling meal! I may have just eaten three....

Freezable Burgers

Having three young children, quick easy meals can sometimes be an necessity. I wanted to batch make/cook some burgers, to freeze down and then just pop in the oven.

1x large beetroot
Chunk of tofu
Handful (large) of kale
2x large mushrooms
Tablespoon of peanuts, cashew nuts, hazelnuts and sunflower seeds.
A sprinkle of chia seeds

Pepper, Rosemary, chopped chives and thyme.

Blend up the nuts.

Blend, chop and mix it all together.

Roll into equal balls and flatten onto tin foil.

Cover, or put in Tupperware. Pop in the freezer.

Cook for about 40mins on 200, check then and flip them. (I burnt mine but I forgot they where there!) very yummy.

Nut & Veg Burgers

Tonight I gave it a try to make some burgers, I was so quick serving them up and them being devoured that I didn't get a photo!

Ingredients:

1 onion
1 courgette
1 stick of celery
1 carrot
1 apple
Handful of peanuts
Handful of cashew nuts
Breadcrumbs
2 tablespoons of self raising flour
Sesame seeds
Sunflower seeds
1 tablepoon of walnuts

Blend walnuts, peanuts and cashews together.

Grate onion, carrot, courgette, apple, and celery. Before adding to the nuts, squeeze as much water out as you can, through a sieve or in a teatowel. Then add to the nut and blend some more.

Add the seeds and blend. I used, Rosemary, thyme, parsley, pepper and a sprinkle of chili powder.

Add in the breadcrumbs and flour, till its socked up lots of the extra water.

Then roll in your hands into 6 individual balls. Put on a plate, sesame seeds breadcrumbes and then pat down the balls into burger shapes, well coated each side. Put in a baking tray with tinfoil over and cook for about 45min or till cooked through. Take off the tinfoil to brown off. (We were hungry so I took them out and fryed them for a few mins on each side.)

They where eaten so quick I didn't get a photo but will make again soon!
